Will a cast iron pot work well for chili? Cast iron is great for cooking just about anything. I use cast iron cookware for stir frying, baking corn bread, and yes, for making chili. When properly seasoned, things like tomatoes or other acidic foods never come into contact with the iron. Even though some studies suggest, cooking with iron is great for the blood. For those with iron sensitive blood, be sure and use plastic or nylon utensils as these will not wear off the iron in the pot.
Cast iron heats pretty evenly, but can burn food if cooked at temperatures too high. This can also lead to seasoning problems. Slow cooked food is best anyway.
